Kale Chippies


You need~

  • 1 bunch or organic kale- stalks removed
  • 1 TBS olive oil
  • pinch salt

How its done~

  • Preheat oven to 200c.
  • Tear the kale into chunky squares and coat in oil
  • Lay on baking tray and cook for 10 minutes until crunchy

*tahini, tamari and maple syrup make for a yummy coating before putting in the oven

Activated Nuts


You need~
4 cups mixed nuts- almonds, pecans, macadamias and brazil are the best activated
1 tspn sea salt

How its done~

  • Soak the nuts overnight in filtered water with sea salt
  • Rinse and lay out in oven on baking tray (with no oil) and allow to slowly dry over 24 hours on the lowest heat possible.
  • Make sure nuts are crisp and crunchy. If still a little soft return to oven until they are ready. Toss with fine sea salt
  • Can store in freezer or sealed jar

* Mix it up with some apple cider vinegar before putting in the oven for a salt and vinegar hit.
* Coat in tamari when they are almost ready to take out of the oven for a salty crunch
*A hint of sweetness can be added with some cinnamon and maple sugar dusting after they are out of oven

Nori Wraps with Sprouts, Cranberries & Almonds


You need~

  • 1 pack of nori sheets
  • Handful of sprouts- alfalfa, buckwheat, snow pea-any sprouts you fancy
  • 1/2 an avocado sliced lengthways
  • 1/2 cucumber sliced into strips
  • 1/2 carrot sliced into strips
  • 1/4 cup slivered almonds
  • 1/4 cup cranberries


  • 1 TBS unhulled tahini
  • 1 TBS tamari
  • Squeeze of lemon

How its done~

  • Lay the nori sheet down and spread the vegetables lengthways, leaving a 2 cm strip along the edges.
  • Mix the dressing ingredients together and drizzle over.
  • Wrap up and seal with a little splash of water on the bottom of wrap. Serve with extra sauce and a sprinkle of sesame seeds.

*Can add protein of choice and quinoa for a little bit more body!
